Lime flavored Octopus and Orange Salad
Ingredients: boiled octopus, thinly sliced sweet onion, oranges, lime peels, lime juice, Spanish olives with spices, garlic and chili pepper, olive oil
Octopus is a low calorie food with high protein. low fat, and low carb. It also contains Vitamin B12, niacin, potassium, copper, zinc and other nutrition.
Tako: (pronounced like tacos). Means octopus in Japanese.
Poke: (pronounced poh-kay). Means cut or slice in Hawaiian.
Octopus is not very popular food among the world. Mostly they are eaten in Mediterranean countries, Japan, Korea, and Mexico besides Hawaii. Divers can catch them easily in Hawaiian sea. Local people in Hawaii often call octopus "tako" whch is Japanese word.
Poke is Hawaiian food. The traditional Poke is made of sliced ahi(tuna fish), kukui nuts, limu(sea weed), and sea salt. Today, there are more varieties of poke. They use different ingredients(salmon, octopus, mussels, crabs, etc) and sauce(soy sauce are popular: Japanese style with wasabi, Chinese style with sesame oil flavor, Korean style with kimchee flavor). You can purchase them in grocery stores. The Korean style kimchee flavored Tako Poke is popular.

Vietnamese Style Orange Chicken and Papaya Salad

Marinate chiken thigh(without bone) in orange sauce for 30 minutes to 1 hour. Grill the chiken or roast in the oven.
orange sauce ingredients:
fish sauce, minced garlic, orange juice(either fresh or 100% concentrated), orange marmalade,
sake(rice wine)
Heat the sauce after marinating the chicken to make gravy sauce.
Ciantro also goes well with the orange chiken.
Green Papaya Salad
Ground a clove of garlic and fresh red chili pepper.
Add fish sauce, lemon juice, and sugar and mix together.
Toss shredded green papaya and cilantro in the sauce.
Put peanut flakes on the top of the salad.

Vegetarian Dish: Wild Rice Salad
Wild rice is high in protein and low in fat. Contains minerals such as magnesium, phosphorus, zinc, iron, and manganese. Also, provides Vitamin B, niacin, riboflavin, and folate. It is also a good dietary fiber.
Ingredients: finely chopped garlic, olive oil, copped eggplants, bell peppers, zucchini, wild rice, Belgian endives
1. Stir fry garlic in olive oil with medium heat.
2. Add egg plants, red bell peppers, and zucchini.
3. Put some salt and pepper.
4. Add cooked wild rice and turn off the heat.
5. Put on Belgian endives after cooled. You may keep in the refrigerator and serve cold.
Spicy Hot Crispy Carlic Shrimp
Stir fry minced garlic and chili pepper in oil with low heat until lightly browned.
Marinate shrimps with sake, salt, and white pepper. Mix wheat flower and potato starch in a plastic bag. Shake the shrimps in the bag.
Fry the shrimps and put on a plate. Top them with crispy garlic and flakes. Squeeze lemon juice just before eating. Also put some chopped green onion and cilantro if preferred.
Bread for Snack and Appetizer
The breads look like Yin Yang Taichi mark. This dark brown bread is made of white flour and black
rice natural yeast.Top of the dark bread is fig cream. Sweet soft large Japanese dried figs were used.
Soak the dried fig in the Brandy for a few weeks. Mix the minced fig and Mascarpone cream cheese
and spread on the bread. Dried California dates can substitute the figs.
Spread the Arugula Pesto and put Parma Prosciutto on the white bread. The ingredients of the
Pesto Verde(green paste): arugula(rocket salad), garlic, salt, olive oil, macadamia nuts, walnuts, and
cashew nuts.
